Amaretto Applesauce Cake

Wade and I are not big on sweets, for the most part.  Though some special occasions do call for a bit of sweet dessert.  We had some friends from out of town over this past weekend. To celebrate we had a meal of Chicken Marsala (made by Wade), spinach artichoke dip and bread, salad with pomegranate vinaigrette, and this cake.

I based this recipe on the applesauce cake recipe from Smitten Kitchen, omitting the sugar and adding some amaretto for a more grown up and sophisticated flavor.  It came out with a nice, dense texture that reminded us of coffee cake.  It would be just as nice in the morning with a cup of coffee as after dinner or with mid afternoon tea.

•2 cups flour
•2 teaspoons baking powder
•1/2 teaspoon baking soda
•1 pint cinnamon applesauce (or regular applesauce with 1 teaspoon of cinnamon added)
•1/2 cup amaretto
•1/2 cup butter, softened
•2 eggs

Preheat oven to 350.  Grease a 9×9 inch baking pan.  Set aside

Mix together all ingredients until just combined.  Spread the thick batter evenly into the bottom of the prepared baking dish.  Bake for 35-40 minutes, or until the center of the cake springs back when touched lightly.
