Halloween Food Day 21: Slithering Philly Snakewich

I sometimes spread sandwich fillings over pizza dough and roll it all up and bake it like a stromboli.  It is so easy to just curve the dough around a little bit and add eyes and a tongue to make it into a cute snake for a Halloween supper.  I used roast beef, onions, pepper, and cheese for the filling, but this could easily be done with Ruben fillings or even a simple turkey and Swiss.

•fresh, frozen, or refrigerated pizza dough
•6 ounces sliced roast beef, chopped
•1 small onion, cut into chunks
•2 red or green bell peppers, cut into chunks
•1 cup shredded mozzarella or provolone cheese
•A couple cloves of garlic, minced
•1 piece of roasted red pepper, cut to look like a snake tongue
•2 pimento stuffed olives
•olive oil and parsley for topping

Preheat oven to 350.

Roll out pizza dough to form a large rectangle.

Heat a little olive oil in a skillet over medium high heat.  Saute the onion, garlic, and bell peppers until almost tender.  Add the roast beef and cook for a few more minutes, or until the beef is slightly browned.

Sprinkle the shredded cheese over the pizza dough.  Top with the meat mixture.  Spread to within an inch on each side of the dough.  Roll up gently in a jelly roll style. Gently transfer the sandwich to a baking pan and curve it into a slight “S” shape.  Cut a small slit for the mouth and insert the roasted red pepper tongue.  Make two indents and press in the olive eyes.  Brush with olive oil and sprinkle with parsley.

Bake for about 25 minutes, or until golden brown.  Cut into slices and serve.
