I love coffee, but most mornings I just drink it black. Some mornings, though, call for something a little fancier than just black coffee. Cafe au lait is easier to make at home than cappuccinos or lattes because you don’t need any special equipment, and it takes hardly any more time than brewing up a normal pot of coffee. since the recipe is 1/2 and 1/2 it is easy to make a batch as large or as small as you like.
Prepare desired amount of coffee double strength with a little bit of pumpkin pie spice added to the grounds. I use a French press to do this, but a drip coffee maker would work just fine.
Heat up an equal amount of milk on the stove, or in a large bowl in the microwave. Use a small wire whisk to beat the very hot milk until it is very frothy. This will take a minute or so. Fill a mug or cup halfway with the double strength coffee and then fill the rest of the way up. Top with a spoonful or so of foam.
