Halloween Food Day 11: Mummy Melts

Today I am home my myself cooking, cleaning, and doing some writing.  I decided on an old favorite when I took a break for lunch: Tuna Melts.  I love how quick and easy they are to put together.  Plus, they aren’t too high in fat since I make them with olive oil mayo instead of the regular kind.  There are tons of mummy pizza recipes floating around on the internet, so I applied this same concept to the tuna melt and had two cute little sandwiches for lunch.

•1 small can tuna in water, drained
•2 Tablespoons pickle relish, sweet or dill
•2 Tablespoons olive oil mayonnaise
•scant 1/4 cup chopped onion
•Salt and pepper, to taste
•2 slices mozzarella or white cheddar cheese, cut into matchsticks
•4 pimento stuffed green olives
•A split English muffin

Preheat the broiler.

Split the English muffin and toast it 4 inches from the heat for just a couple minutes, until lightly toasted.

Mix together the tuna, relish, mayo, onion, salt, and pepper.  Top the english muffin with the tuna salad.  Arrange the cheese over each muffin so that it forms mummy bandages.  Like this:

Broil until the cheese melts and becomes slightly bubbly.  Insert the olive eyes just before serving.

  1. Everyday your pictures are getting better. In the sense of their style, light contrast, and overall imagery. I love the fact that you are making such wonderful food, and that you are experimenting with Halloween as your emphasis. I can't wait to try more of your tasty treats, and entrees.
