Halloween Food Day 1: Pumpkin Pie Biscotti

Pumpkin pie is one of the first things that comes to mind when thinking about fall food, though I think of it as an exclusively Thanksgiving sort of treat.  Pumpkin biscotti, on the other hand, is a nice intro into all the tasty treats that fall has to offer.  It’s good dunked in coffee for breakfast or for a break in the middle of the afternoon.

Pumpkin Pie Biscotti
Adapted from Simply Recipes


•2 1/2 cups all purpose flour
•1 cup sugar
•1 teaspoon baking soda
•2 teaspoons pumpkin pie spice
•2 eggs
•pinch of salt
•1/2 cup pumpkin puree
•1 teaspoon vanilla extract

Preheat oven to 350.

Mix all of the dry ingredients together.  Make a well in the center and mix in the eggs, pumpkin, and vanilla.  Stir to combine.  The dough will be very dry and stiff.  That’s ok as long as it is all mixed together.  You may need to knead it with your hands a bit.

Shape into a long and wide loaf on a cookie sheet.  Bake for about 25 minutes, or until the biscotti feels only slightly soft when pressed in the center.  Remove from oven and let cool for 15 minutes.

Lower oven heat to 300.

Slice the biscotti into 1/2- 3/4 inch slices.  Return to the cookie sheet and bake for another 20-25 minutes, until the cookies are quite dry.
